Garlic Wild Turkey Breast With Fire Roasted Bell Peppers & Grilled Asparagus

Ingredients/Materials:

1 deboned wild turkey breast

Olive oil

Asparagus

Bell peppers

1 Yellow onion

Kosher salt

Coarse ground black pepper

12 ounces Applewood smoked bacon

Garlic

Toothpicks

Foil

For the Marinade:

3 cloves of garlic

1/2 cup olive oil

1 tablespoon of kosher salt

1 tablespoon of coarse ground black pepper

Step 1: Cut the wild turkey breast into small chunks or strips that are about the size of a deck of cards.

Step 2: Peel and crush 3 cloves of garlic, and mix them with 1/2 cup of olive oil, 1 tablespoon of kosher salt, and 1 tablespoon of coarse ground black pepper in a large bowl or container. This will be the marinade that you will use for the wild turkey breast.

Step 3: Toss the chunks of turkey in the marinade you created until they are thoroughly coated. Cover them and refrigerate for 2-3 hours.

Step 4: After the wild turkey breast meat has marinated for 2-3 hours, light a fire on one side of the ASF BBQ Pit with a large pile of coals.

Step 5: Wrap each piece of wild turkey breast with a strip of bacon and use a toothpick to hold the bacon in place.

Step 6: Chop up the bell peppers and yellow onion into bite-sized chunks. Mix them together on large a sheet of foil. Fold the edges up so that the foil acts as a pan. Season the bell peppers and onion with kosher salt and coarse ground black pepper to taste, and drizzle some olive oil over them.

Step 7: Snap the ends off of the asparagus and place them on a large sheet of foil. Fold the edges up so that the foil acts as a pan. Season the asparagus with kosher salt and coarse ground black pepper to taste, and drizzle some olive oil over them.

Step 8: Once the coals are hot and have turned gray, place the foil sheet/pan with bell peppers directly over the hot coals on the top rack of the grill.

Step 9: Place the foil sheet/pan with asparagus directly over the hot coals on the bottom rack of the grill.

Step 10: Place the wild turkey meat on the bottom rack of the grill on the opposite end from where the hot pile of coals is located.

Step 11: At about the 10 minute mark, move the asparagus to the top rack of the grill on the opposite end from where the hot pile of coals is located.

Step 12: At about the 20 minute mark, move each piece of wild turkey meat over onto the bottom rack on the side of the grill that is directly over the coals. Sear the meat for 3-4 minutes on each side.

Step 13: Remove the wild turkey breast, fire roasted bell peppers, and asparagus from the grill. Allow them to rest for 5-10 minutes.

Step 14: Serve the wild turkey meat over a bed of bell peppers and onions, with a side of asparagus.
